Slightly Spicy Rigatoni a La Vodka

A classic, Rigatoni a la Vodka, with our ground pork sausage - both EVERYTHING and CALABRIAN work!

INGREDIENTS

  • 1 pack of Lottie’s Calabrian Sausage
  • 1 Shallot
  • 1 tsp Sugar
  • 8oz Tomato Paste
  • 12oz Crushed Tomatoes
  • 1/2 Cup of Vodka
  • 1 Box of Rigatoni (or your favorite pasta shape)
  • Parmesan
  • 1/2 Cup of Heavy Cream
  • Butter
  • Extra Virgin Olive Oil
  • Salt

DIRECTIONS

1. Finely dice one shallot, then sauté in olive oil with a pinch of salt

2. Once the shallot is transparent, add 1lb of Lottie’s Ground Pork Sausage.

3. Brown the sausage over medium heat, then deglaze with 1/4 cup of vodka.

4. Add 8 oz of tomato paste and a pinch of salt to the sausage and mix together. Sauté for a couple minutes over medium-low heat to cook the tomato paste.

5. Once the tomato paste has sautéed, deglaze with 1/4 cup vodka.

6. Add 8 - 12 oz crushed tomatoes, 1 tsp of white sugar, and 1 tsp of salt. Turn the heat to low and simmer for 20 minutes stirring occasionally. (Meanwhile, boil 1 box of rigatoni (or your favorite noodle) until just al dente. Reserve 1 cup of pasta water).

8. Turn off the heat, then add 1/4-1/2 cup of heavy cream to sauce and stir to combine.

10. Add in cooked pasta, 1 tbsp of butter, and a splash of pasta water.

11. Stir together until the sauce coats the noodles. Top with parm and enjoy
