CALABRIAN | Lasagna Soup

This is a one-pot wonder - featuring our calabrian sausage, garlic, tomato sauce, and a touch of heavy cream +ricotta for the ultimate range & balance of flavor. A hearty, comforting & elevated dish that is ready in under 30 minutes. Chefs kiss!

INGREDIENTS

  • 1 pack of Lottie’s Calabrian Sausage
  • 1 container Mafaldine dried pasta (or fresh Sfoglina's Mafaldine) 👀
  • ½ onion, small diced
  • 2 garlic cloves, minced or grated
  • 1 tbsp tomato paste
  • 6 cups chicken stock
  • 1 jar pasta sauce
  • 1 tsp chopped rosemary
  • ½ tsp chopped thyme
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes
  • ½ cup ricotta cheese
  • 1 cup heavy cream
  • 2 cups spinach
  • 1 tbsp olive oil

DIRECTIONS

  1. In a large pot, heat olive oil over medium heat. Add onions and cook 2-3 minutes, then add garlic and cook until fragrant.
  2. Add calabrian sausage to the pot, breaking it apart into crumbles to cook evenly.
  3. Once sausage is cooked, add tomato paste and cook for 3-4 minutes. Add pasta sauce and chicken stock.
  4. Add herbs and spices, and season with salt. Bring to a boil and add pasta noodles.
  5. When pasta is al dente (has a slight bite), add heavy cream and ricotta. Bring to a simmer to thicken slightly.
  6. Add spinach and cook until slightly wilted.

Note: If using fresh pasta, add the heavy cream at the same time as the pasta, as it will cook very quickly.
