CALABRIAN | Lemon & Kale Rigatoni

This rigatoni pasta is the perfect blend of easy + indulgent, with spicy Calabrian chili sausage, fresh lemon, and a rich parmesan + olive oil sauce that’s big on flavor without the fuss. It’s a simple way to bring a gourmet twist to a weeknight din!

INGREDIENTS

  • 1 pack of Lottie’s Calabrian Sausage
  • 1 box rigatoni pasta
  • 1 small onion, diced
  • 1 garlic clove, microplaned
  • ½ small bulb fennel, diced
  • 1 bunch kale, cleaned and chopped
  • 3–4 lemons
  • Parmesan cheese
  • Olive oil
  • Salt and pepper

DIRECTIONS

  • Cook rigatoni according to package directions, reserving 1–2 cups of pasta water.
  • In a medium pan, heat 1 tbsp olive oil over medium. Cook sausage, breaking it into chunks; set aside.
  • In the same pan, sauté onion, fennel, and garlic until tender. Season with salt, then return sausage to pan.
  • Add the zest of 1 lemon, 1 cup pasta water, juice of 1 lemon, and ⅓ cup parmesan. Reduce heat to low.
  • Add pasta and kale, tossing until well-coated. Adjust sauce with additional pasta water, lemon juice, and parmesan as needed.
  • Top with black pepper and extra parmesan before serving.
